The determination to make vegan red velvet cupcakes had literally possessed me. I don’t know why it seemed like such a huge deal.. but i searched everywhere for reasonably priced natural vegan food coloring that I didn’t have to order from a store. That was the first failure. Plan B: beet powder. Again, I searched everywhere.. but that was failure #2.. no beet powder to be found, in Denver, or the surrounding metro areas. SO, for Plan C, the last resort, I tried Beet Juice. Unfortunately, I knew the what the results would be even before taking them out of the oven. For some reason, I convinced myself that, “this time, it could work..” The beet juice browned from the heat, and so I had vegan Brown Velvet cake, with cream cheese frosting and cute sprinkles. Maybe next time..
